I’m so proud of these Einkorn Collagen Cookies — they’ve become one of my favorite treats to make at home. The flavor is like a soft, slightly chewy vanilla sugar cookie, but with a subtle earthy depth from the einkorn flour. They’re pillowy soft in the center, perfectly sweet, and the sprinkles give them a playful little bit of texture. 

I’ve always loved cookies, but I also wanted a version that felt more nourishing and gentle on my digestion. That’s how I landed on einkorn flour, which feels lighter for me.  I started experimenting by adding collagen peptides to boost protein and it works so well in this recipe!

These Einkorn Collagen Cookies might just become a staple cookie in your home like it is in mine!

 

 

Variations -  The base of this cookie is pretty universal, making it perfect for your favorite variations like:

  • Sprinkles + White Chocolate Chips → A bakery-style cookie with a funfetti vibe.

  • Cranberry + Pistachio → Chewy and crunchy 

  • Peanut Butter Swirl → Drop in a spoonful of peanut butter and swirl it through before baking.

  • Dried Blueberries or Cherries → Adds chewiness and pairs beautifully with the vanilla base.

  • Sea Salt Finish → Sprinkle flaky sea salt on top right after baking to balance the sweetness

  • Chocolate Chip Collagen Cookies – Swap the sprinkles for mini chocolate chips.

  • Lemon Collagen Cookies – Add fresh lemon zest to coconut sugar and roll dough in that instead of sprinkles

  • Almond Collagen Cookies – Use almond extract instead of vanilla and top with sliced almonds.

  • Spiced Collagen Cookies – Mix in cinnamon and nutmeg for a cozy, earthy cookie.

  • Coconut Collagen Cookies – Stir in shredded coconut and a drizzle of melted white chocolate.

Soft Einkorn Flour Collagen Cookies

Ingredients

Directions

  1. 1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. 2. In a mixing bowl, combine the einkorn flour, collagen peptides, baking soda, and sea salt.
  3. 3. In a separate bowl, cream together the coconut sugar and coconut oil until smooth.
  4. 4. Add the egg, milk and vanilla extract to the sugar mixture and mix well.

  5. 5. Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms.
  6. 7. Roll the dough into small balls, then roll them in sprinkles to coat.
  7. 8. Place the cookies on the prepared baking sheet

  8. 9. Bake for 10-12 minutes, or until the edges are golden brown.
  9. 10. Allow the cookies to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
