Honey Greek Yogurt Muffins with Cinnamon Sugar

These honey Greek yogurt muffins come together with ingredients you probably already have in your kitchen. They’re lightly sweetened with honey,  soft from the Greek yogurt, and made with coconut oil but you can substitute with any oil, I find the coconut oil gives a really good flavor.

The cinnamon sugar topping gives them just enough sweetness to feel like a treat, while still being balanced enough for breakfast or an afternoon snack. You could use coconut sugar, brown sugar or just skip it and have them with just the honey flavor (which comes through nicely in this recipe). You can also use this base recipe and add in any of your favorites like berries, or bananas, or chocolate chips. They’re the kind of muffin that works for busy mornings, lunchboxes, or whenever you need something homemade that isn’t overly sugary.

Honey Greek Yogurt Muffins with Cinnamon Sugar

Ingredients

  • 1 ¾ cups all-purpose flour

  • 1 tsp baking powder

  • ½ tsp baking soda

  • ½ tsp salt

  • 1 tsp cinnamon

  • ¾ cup plain Greek yogurt

  • ⅓ cup honey

  • ⅓ cup melted coconut oil (cooled)

  • 2 eggs

  • 1 tsp vanilla extract

  • 2 tbsp any sugar I like coconut or brown sugar

  • ½ tsp cinnamon

Directions

  1. Preheat oven to 350°F and line a muffin tin.

  2. In a bowl, whisk together flour, baking powder, baking soda, salt, and cinnamon.

  3. In another bowl, mix Greek yogurt, honey, coconut oil, eggs, and vanilla until smooth.

  4. Add dry ingredients to wet and stir gently until just combined.

  5. Divide batter evenly into muffin cups.

  6. Sprinkle cinnamon sugar over each muffin.

  7. Bake 15–18 minutes until tops spring back.

  8. Cool slightly before serving.
