What is Ube?

Ingredients:

  • 1 Ube purple yam
  • 5 Dates
  • 1 Tbsp Cocoa powder
  • 3/4 Cup Nut milk
  • Pinch of salt

 

Directions:

Start by roasting 1 yam at 400° for about 40 minutes or until it's fork tender. While it's roasting, in a food processor or blender combine dates, cocoa powder, nut milk and salt. Blend until the dates are completely pulverized. Once yam is cooked, let it cool. Peel the skin off and add flesh into blender. Blend all the ingredients together until it reaches a smooth pudding like consistency. It can be eaten immediately or refrigerated if you prefer it cold.  Top with sliced almonds, dusted cocoa powder, whipped cream or serve alone and enjoy!
