Einkorn Flour Sourdough Blondies

healthier sweet treat.

I've tweeked this recipe several times to come up with what I feel is a perfectly delicious sourdough blondie made with einkorn flour. All the Carmely-buttery sweetness but made just a *little* healthier. Try adding white chocolate, dark chocolate chunks, nuts or marshmallows.. Enjoy!
½ cup (1 stick) unsalted butter, melted and slightly cooled
¼ cup coconut oil (melted)
1 cup light brown sugar, packed
½ cup coconut sugar
1 egg + 1 egg yolk (extra yolk = fudgier texture)
½ cup sourdough discard (unfed)
1 Tbsp vanilla extract or vanilla bean paste
1 cup einkorn flour
¾ cup all-purpose flour
1 tsp baking powder
½ tsp salt
¾ cup chopped dark chocolate or chocolate chips
Fold in the chocolate (or any other add-ins).
Texture & Flavor Notes:
The mix of brown sugar + coconut sugar gives deep caramel flavor with a hint of molasses.
Einkorn flour adds nuttiness and softness but blending it with AP flour helps it keeps it's structure.
The extra yolk + melted butter ensures chewiness instead of cake-like blondies.
Sourdough discard adds a subtle tang and extra moisture, making them more complex in flavor.
